Hi! When used in regards to fruit trees, "standard" usually
refers to the eventual size of the tree. Many fruit trees are
grafted onto varying degrees of dwarfing rootstocks. In the
Nursery trade a "Standard" in regards to fruit trees means a
full size tree.

This is in addition to the "standard" that treedoc talks about.
For the most part trees are usually grafted in the nursery trade.
It has to with soil adaptability, virus resistance, the
dwafing capabilities of the rootstock, or the inability of some
propagated tree varieties to grow on their own roots.
